Lampuki Pie (Dolphin fish)

Ingredients

  • 3 tbsp Olive Oil
  • half can Mayor Diced Onions
  • 4, sliced Garlic Cloves
  • 200g Three Hills Kunserva (tomato paste)
  • 50g, roughly chopped Black Olives
  • 1 tbsp, halved Capers
  • Chopped Basil Leaves
  • 400g, cooked and cut in chunks Lampuki (Dolphin fish)
  • 2, cooked and cut in small chunks Potatoes
  • 300g Puff Pastry
  • 140g Mayor Processed Peas
Heat the olive oil and lightly fry the onions and garlic. Add the Three Hills Kunserva, olives and capers and simmer for a couple of minutes and after let to cool down. In a separate bowl mix the fish chunks, potatoes and peas and basil leaves and add to the mixture. In the meantime prepare the pastry in a well-greased dish. Add the mixture and close pie. Pierce with fork and cook for about 45 minutes in a well heated oven.
