Chicken, Leek & Mushroom Pie

Preheat the oven to 200C/180C fan assisted oven.

Heat oil in a medium sized saucepan, cook the leek, bacon and mushrooms, stirring until leek softens.

Stir in the flour, cook, stirring until mixture boils and thickens. Stir in the cream, mustard and cooked chicken.

Divide mixture among 4×1 cup (250ml) ovenproof dishes. Top each with a pastry quarter. Bake, uncovered in oven for about 20 minutes or until browned.

Spinach Pie

Cooking the spinach in boiling water for 1 minute until it slightly wilts. Drain and squeeze to remove excess water and finely chop it. In a large pan lightly cook the Mayor Diced Onons. Add the garlic and spinach and cook until all ingredients are tender. In a bowl, mix the Ħanini Irkotta with the eggs and add the spinach mix. Halve the pastry and line a greased oven dish. Pour the mixture into the dish and cover with the rest of the pastry. Bake in hot oven for 45 minutes in a 200°C hot oven.

Healthy Broad Bean and Irkotta Pies

Prepare the pastry by mixing the flour with the yogurt till a dough is formed. Cut in small portions and open. In the meantime, mix the filling ingredients in a bowl and fill in the rolled dough. Close well and bake in hot oven.
