Grilled Zucchini Salad

Ingredients

  • 4, cut in rings Zucchini
  • 2 tbsp Extra Virgin Olive Oil
  • 300g Cherry Tomatoes
  • 100g Black Olives
  • 100g Sweet Pickled Onions
  • 2 tbsp Pinto's Pride Balsamic Vinegar
  • 50g Rosemary
  • Salt & Pepper
Preheat the oven on grill for about 5 min on medium heat. Brush the zucchini rings with the olive oil and season with salt and pepper. Place the zucchini rings in a baking dish together with the cherry tomatoes and cook until charred and just beginning to soften. Remove from the oven and let them cool down. In a serving bowl, mix the olives, the onions, the balsamic vinegar and the rosemary and season with salt and pepper. Bring the cooled zucchini and tomatoes in with the mix. Serve with toasted bread or with cold pasta.
