Fried Lampuki

Ingredients
- Cut into portions Lampuki (Dolphin fish)
- 50g Semolina
- 4 tbsp Olive Oil
- Salt & Pepper
- Lemon Juice
- Chopped Onion
- Chopped Garlic Cloves
- 1 tbsp Three Hills Kunserva (tomato paste)
- 400g Mayor Polpa (tomato pulp)
- 100g Black Olives
- 30g Capers
- Finely Chopped Basil
- Finely Chopped Mint
- 100ml Fish Stock Cube
- Black Pepper
Heat the oil in a pan. Meanwhile, roll the lampuki fillets in the semolina and fry in the heated oil. Season to taste and add the lemon juice. Fry until brown on both sides. In a pot, heat a little oil and fry the onion and garlic. Add the Three Hills Kunserva the Mayor Tomato Pulp and fish stock, and simmer for 5 minutes. Add the olives, capers, basil and mint. Serve hot with the sauce.
