Caponata Sauce

Ingredients
- 2 tbsp Olive Oil
- 125g, cut in chunks Green Peppers
- 125g, cut in chunks Red Peppers
- 125g, cut in chunks Yellow Peppers
- 100g, de-stoned Black Olives
- 4, halved Garlic Cloves
- 200g Mayor Polpa (tomato pulp)
- 200g Three Hills Kunserva (tomato paste)
- 1/2 tbsp Oregano
In a pan, heat the olive oil and shallow fry the vegetables for a couple of minutes. Add the Mayor Polpa, the Three Hills Kunserva and the oregano and simmer for about 45 minutes until all vegetables are tender. Serve sauce either with meat or fish.
