Baked Salmon Fillet

Ingredients

  • 4, 3cm thick Salmon Fillets
  • 2 tbsp Olive Oil
  • Salt
  • 1 tsp, dried Basil Leaves
  • 1 tsp, dried Mint
  • Lemon Juice
  • Lemon Zest
  • 1 tbsp Butter
  • Black Pepper
Preheat oven to 180 C. Cut four squares of tin foil about 20cm in size. Place the fillets on the foil. In a small bowl mix the olive oil, lemon juice and dried herbs. Pour on top of the fillets. Add the crushed salt. Wrap each fillet into a parcel and make sure the foil is closed all around. This allows the salmon to cook without getting dry. Place in the oven and cook for about 15minutes or until fillets are cooked through. Heat a large frying pan and smear it with the butter. Carefully place the fillet, one at a time and fry for about a minute until lightly golden on top. Garnish with the lemon zest and serve with baked potatoes and roasted vegetables.
