Tortellini in Broth

Ingredients

  • 600g, ready made Cheese Tortellini
  • 3 tbsp Unsalted Butter
  • 3, chopped Shallots
  • 2, small, sliced Carrots
  • 2, minced Garlic Cloves
  • 1.5ltrs Chicken Broth
  • 750 ml Water
  • 1/2 tsp Pepper
  • 1/2 tsp Nutmeg
  • 150g, grated Hanini Pekorin Mature Cheese
Melt the butter on medium heat in a stock pot. Add the chopped celery, shallots, carrot and garlic. Cover and reduce heat to low and cook for about 10 minutes until vegetables start to soften. Add the broth and water and turn up the heat back to medium and bring to boil. When it boils add the pepper and nutmeg and stir. Reduce heat back to low and add the tortellini. Simmer until tortellini are cooked to al dente. Turn off heat, stir in the parsley. Serve with grated Hanini Mature Pekorin cheese.
