Pork & Vegetable Soup

Ingredients

  • 150g Lentils
  • 4 ltrs Water
  • 1 tbsp Cooking Oil
  • 2 tbsp Three Hills Kunserva (tomato paste)
  • 300g, chopped Cauliflower
  • 300g, chopped White Cabbage
  • 200g, chopped Pumpkin
  • half can Mayor Diced Onions
  • 200g, peeled and chopped Turnip
  • 2, sliced Carrots
  • 400g, chopped Marrows
  • 400g, sliced Pork Shank
  • 4 Hanini Fresh Cheeselets
  • Salt & Pepper
  • 30g Hanini Pekorin Mature Cheese
Soak the lentils overnight in luke warm water. Fill a deep pot with the water, add the soaked lentils, the cooking oil and Three Hills Kunserva. Bring to the boil. Add all the vegetables and pork and simmer for around an hour. Add the Fresh Ħanini Cheeselets and continue cooking for another 30 minutes. Season to taste and serve with grated Ħanini Mature Pekorin Cheese.
