Penne with Caponata

Ingredients

  • 450g Rigatoni Pasta
  • 1 tbsp Olive Oil
  • 3 tbsp Three Hills Kunserva (tomato paste)
  • 400g Mayor Caponata
  • 250g Hanini Irkotta
  • Basil Leaves
  • 50g, toasted Pine Nuts
  • Salt & Pepper
Boil the pasta according to the packet’s directions. In a pan, heat the oil; add the Three Hills Kunserva and Mayor Caponata until warm. Drain the pasta and add to the pan. Mix well. Roughly chop the Ħanini Irkotta and add to the pasta. Add the basil leaves and the pine nuts. Season well with salt and pepper and serve.
