Chicken & Rice Broth

Ingredients
- 900g, with bone Chicken Breasts
- 2, chopped Onions
- 2, peeled & sliced Carrots
- 2, small & quartered Tomatoes
- 2, medium, peeled & halved Potatoes
- 1 1/2 tbsp Three Hills Kunserva (tomato paste)
- 1 small, chopped Kohlrabi (gidra)
- 2 ltrs Water
- Salt & Pepper
- Soaked in water Basmati Rice
Place the chicken in a pot of cold water and cover with 2ltrs of water and a generous pinch of sea salt. Bring gently to the boil. Add the vegetables and Three Hills Kunserva and simmer very gently for about 2 hours. During the last 15 minutes add the rice. Before serving take out the chicken and break it down with a fork. Add it back to the soup or serve as a main course. Serve piping hot.
