Mixed Season Vegetable Soup

Ingredients
- 100g Peeled and chopped Spring Onions
- 100g Peeled and chopped Spring garlic
- 100 g Peeled Broad Beans
- 2 Tablespoons Three Hills Kunserva (tomato paste)
- 2 Peeled and chopped Potatoes
- 2 Cleaned and chopped Zucchini
- 2 Peeled and chopped Carrots
- Chopped Celery
- 4 Tablespoons Olive Oil
- One and half litres Water
- 1 sliced Hanini Gibna Roll
- Salt and pepper to taste
In a large pot, pour the oil and fry the onion and garlic, add the Kunserva and cook for another minute. Add all the vegetables and lightly cook for a couple of minutes. Add the water, season, and bring to boil. Simmer on a low flame for around 40 minutes. Serve with Ħanini Ġibna slices. Recipe from Mill-Kcina ta’ Pawlina
