Mixed Season Vegetable Soup

Ingredients

  • 100g Peeled and chopped Spring Onions
  • 100g Peeled and chopped Spring garlic
  • 100 g Peeled Broad Beans
  • 2 Tablespoons Three Hills Kunserva (tomato paste)
  • 2 Peeled and chopped Potatoes
  • 2 Cleaned and chopped Zucchini
  • 2 Peeled and chopped Carrots
  • Chopped Celery
  • 4 Tablespoons Olive Oil
  • One and half litres Water
  • 1 sliced Hanini Gibna Roll
  • Salt and pepper to taste
In a large pot, pour the oil and fry the onion and garlic, add the Kunserva and cook for another minute. Add all the vegetables and lightly cook for a couple of minutes. Add the water, season, and bring to boil.  Simmer on a low flame for around 40 minutes. Serve with Ħanini Ġibna slices. Recipe from Mill-Kcina ta’ Pawlina
