Fried Lampuki

Ingredjenti

  • Cut into portions Lampuki (Dolphin fish)
  • 50g Smid
  • 4 mgħaref żejt taż-żebbuġa
  • Melh u Bzar
  • Meraq ta’ lumija
  • Chopped Onion
  • Chopped Garlic Cloves
  • 1 Mgħarfa Kunserva Three Hills
  • 400g Polpa tal-Mayor
  • 100g Black Olives
  • 30g Capers
  • Finely Chopped Basil
  • Finely Chopped Mint
  • 100ml Fish Stock Cube
  • Bżar
Heat the oil in a pan. Meanwhile, roll the lampuki fillets in the semolina and fry in the heated oil. Season to taste and add the lemon juice. Fry until brown on both sides. In a pot, heat a little oil and fry the onion and garlic. Add the Three Hills Kunserva the Mayor Tomato Pulp and fish stock, and simmer for 5 minutes. Add the olives, capers, basil and mint. Serve hot with the sauce.
