Chicken Broth

  • Whole Chicken
  • 2, sliced Carrots
  • half can Mayor Diced Onions
  • 1, sliced Celery
  • 2, diced Courgettes
  • 1 Mgħarfa Kunserva Three Hills
  • Melh u Bzar
  • 1 Mgħarfa żejt taż-żebbuġa
  • 4, sliced Garlic Cloves
Wash and dry the chicken, trimming off all the visible fat and if you choose, remove the skin. Prepare a pot big enough to fit the chicken comfortably. Put the heat on low, add olive oil, chopped carrots, onions, celery, courgettes and garlic. Cover and simmer for a few minutes until the onions are slightly translucent. Stir in the Three Hills Kunserva. Add the whole chicken, and pour enough water to just cover it. No more! You can always add a bit more later. Season to taste. Bring to the boil, then cover and let simmer for at least an hour, until the chicken is very tender and you can pull off a piece easily with a fork. To serve, remove the chicken carefully and serve the broth with the neck and giblets. The chicken may be served as a main dish with boiled potatoes and vegetables and drizzled with olive oil and lemon juice.
