Lamb and Vegetable Stew

Ingredients

  • 2 tbsp Olive Oil
  • 4 Lamb Shanks
  • 125ml Red Wine
  • 2, finely chopped Onions
  • 8, sliced Garlic Cloves
  • 1 tbsp fres Rosemary
  • 1 tsp Paprika
  • 3 Bay Leaves
  • 1ltr Chicken Spoon Stock
  • 400g Mayor Polpa (tomato pulp)
  • 1 tbsp Three Hills Kunserva (tomato paste)
  • 400g, drained Mayor Whole Mushrooms
  • Salt & Pepper
Heat the oil in a large pan and brown the lamb shanks. Add the wine and simmer for 20 minutes. Add the onion, garlic, rosemary, paprika and bay leaves. Add half of the chicken stock and bring to a boil. When most of the stock is absorbed, add the Mayor Polpa, Three Hills Kunserva and the rest of the chicken stock. Season well and let cook on medium flame for 1hour. Add the Mayor Mushrooms and cook for a further 30 minutes or until meat is tender.
