Homemade Bread

Ingredjenti

  • 3 cups Strong Plain Flour
  • 2 tbsp Dried Yeast
  • 1.25 tsp Salt
  • 2 Mgħaref żejt taż-żebbuġa ta’ Savina
  • 1.5 cups Warm water
If you don't have strong (bread) flour reduce the water slightly. In a large bowl add all the ingredients and mix well incorporating all the flour, (the Pinto's Pride mini wooden spatula works well). Cover bowl with plastic wrap and a dry tea towel. Leave to prove for 1 hour or until the dough doubles in size. Lay out a piece of oven paper and flour well. Empty the dough out of the bowl, it will be very soft and sticky. Take one edge of the dough, lift and stretch it and fold it over then do it for the other 3 edges. Repeat one more time. Shape the dough into a ball, and cover with the plastic wrap and the tea towel. Leave to prove again for 15 minutes. Meanwhile put the cast iron casserole dish with the cover on into the oven and preheat to 200°C for about 30 minutes. Score the surface of the dough with a sharp knife and lift it with the oven paper and place in the casserole. Replace lid and bake for 30 min. Remove casserole lid and continue baking for another 15 to 20 minutes. Loaf should sound hollow when you tap the bottom. Cool on a wire rack then enjoy! Recipe and photo by D.E. Farrugia.
