Salad Dressing

When dressing a leafy salad make sure that all the leaves are thoroughly dry before adding the dressing, so that it doesn't run off them to make a watery pool of juice in the base of the bowl. If using unwashed leaves, rinse and dry between sheets of kitchen paper or use a salad spinner. Only add the dressing shortly before serving.tta For a quick, tasty basic dressing, whisk together 6 tablespoons extra virgin olive oil, 1.5 tablespoons Pinto's Pride Red or White Wine Vinegar, 1 teaspoon Dijon mustard and 0.5 teaspoon sugar and season well. Serve over the greens. Instead of vinegar you may use Pinto's Pride Balsamic Vinegar or lemon or lime juice and sugar may be replaced with honey. You may also add flavours using the following: crushed garlic, chopped spring onions, finely chopped herbs, fresh ginger, finely chopped fresh chilli or Three Hills Kunserva Helwa.
