Tomatoes

Tomatoes are savory fruits that are richest in flavour and nourishment when fully ripened. Choose tomatoes that are deeply coloured and slightly soft, without very soft or damaged spots. Store tomatoes at cool room temperature - don't refrigerate as this removes much of their aroma. If you opt to refrigerate them, leave them at room temperature for as long as possible before using them. To peel a tomato, use a knife to cut a small X at its bottom, immerse it briefly in simmering water until the corners of the cut curl up, then remove it and pull on the skin corners. Intensify the flavour of canned tomato sauces and juices by adding a small amount of sugar.
