Yogurt & Onion Potato Salad

Ingredients

  • 900g Potatoes
  • 225g Plain Yogurt
  • 2 tbsp Mayor Mayonnaise
  • 1 tbsp White Vinegar
  • 1 tbsp Dijon Mustard
  • 3, chopped Green Onions
  • 2, small & chopped Red Onions
  • 1 tbsp, chopped Parsley
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • Salt & Pepper
Clean the potatoes; peel and cut into bite size cubes. Steam or boil until tender. Set aside. In a large bowl, place all the other ingredients and combine. Add the potatoes and toss well. Cover and refrigerate overnight. Return to ro1/2om temperature before serving and sprinkle with more chopped parsley, if desired. If consistency is to dry, add more yogurt or a dash of milk, one spoon at a time.
