Widow’s Soup

Ingredients

  • 250g Hanini Ricotta
  • 1 can Mayor Pelati
  • 1 can (140g) Mayor Processed Peas
  • 125g Cauliflower
  • 1 can Mayor Diced Onions
  • 100g Potatoes
  • 50g Three Hills Kunserva (tomato paste)
  • 4 Eggs
  • Salt & Pepper
Wash, peel and cut all the vegetables in very small pieces. Place them in different bowls. Empty the Mayor Diced onions in a large pan and lightly cook. Do not burn. Add the cauliflower, tomato paste and Mayor Pelati and continue cooking for a few more minutes, stirring all the time. Add the potatoes, salt and pepper and enough water to cover all ingredients in pan.  Mix well.  Place on a medium flame until the mixture start boiling. Lower the heat and let simmer. When the vegetable are nearly cooked add the processed peas. Add the eggs one by one. Cut the Irkotta into four quarters and add gently to the soup. Simmer gently for another 5 minutes. Serve very hot.  When serving, put a piece of Irkotta and one egg in each plate.  Recipe by Anton B. Dougal.
