Swordfish in Tomato Sauce

Ingredients

  • 4 pieces Swordfish
  • 3 tbsp Olive Oil
  • Lemon Juice
  • Salt & Pepper
  • Chopped Onion
  • Sliced Garlic Cloves
  • 1 tbsp Three Hills Kunserva (tomato paste)
  • 400g Mayor Polpa (tomato pulp)
  • 100g Black Olives
  • 30g Capers
  • Basil Leaves
  • Mint
Season the swordfish fillets to taste and marinate them in the lemon juice. Heat the oil in a griddle pan, and cook the swordfish fillets for around 3-4 minutes on each side. For the sauce heat the olive oil and shallow fry the onion and garlic. Add the Three Hills Kunserva, the Mayor Tomato Pulp and simmer for 5 minutes. Add the olives, capers, basil and mint. Pour some sauce over the fish.
