Open Spinach and Irkotta Pie

  • 250g Spinach
  • 1/2 a can Mayor Diced Onions
  • 3, roughly cut Garlic Cloves
  • 2, beaten Eggs
  • 250g Hanini Irkotta
  • 2 grated or roughly chopped Hanini Gibniet Moxxi
  • 250g Puff Pastry
Cook the spinach in boiling water for 1 minute until it slightly wilts. Drain and squeeze to remove excess water and finely chop it. In a large pan, lightly cook the Mayor Diced Onions with the garlic finely chopped until garlic is soft. Add the spinach and cook until all ingredients are tender. In a bowl, lightly mash the the Ħanini Irkotta and add the eggs and the Hanini Gibniet Moxxi. Mix with the spinach mix. Roll out the puff pastry in a round dish well greased and pour the mixture. Bake in hot oven for 45 minutes in a 200°C hot oven.
