Mixed Bean Salad

Ingredients
- 150g Chickpeas
- 150g Red Kidney beans
- 150g Cannellini Beans
- 435g Butter Beans
- 1 Red Onion
- Parsley
- 3 tbsp Olive Oil
- 1/2 Lemon
- Fresh Garlic
- Sea salt and ground black pepper
Drain all the legumes and place in a large bowl. Finely chop the onion and the parsley and add to the bowl. In a separate bowl mix the olive oil with the lemon juice. Add the fresh garlic and season well with salt and pepper. Mix everything together. Serve as a side dish with meat or fish.
