Maltese Curried Rice

Ingredients

  • half can Mayor Diced Onions
  • 2, minced Garlic Cloves
  • 3 rashers, chopped Bacon
  • Ground Black Pepper
  • 1 heaped tablespoon Curry Powder
  • 500g Minced Meat
  • 2 teaspoons Pinto's Pride Worcester Sauce
  • 1 tablespoon Three Hills Kunserva (tomato paste)
  • 2 cans Mayor Sugu
  • 2 teaspoons curry paste
  • 1 small can Corned Beef
  • 300g can Mayor Peas
  • Rice
  • 4 hard-boiled, halved to serve Eggs
Lightly fry the onion and the garlic together until the onion turns translucent. Add the bacon, pepper and curry powder and combine well together. When the bacon is cooked add the mince meat and Pinto's Pride Worcester Sauce. Cook until the meat browns. Add 2 tablespoons Three Hills Kunserva and two cans of Mayor Sugo, two teaspoons curry paste, the corned beef and Mayor Processed Peas. In the meantime cook the rice as per the packet's instructions. When ready add to the meat sauce and serve with hard boiled eggs. Recipe by Margaret Serpina.
