Creamy Pesto Chicken & Veggie Bake

Ingredients

  • 2 chicken breasts, cubed
  • 3 tbsp Mayor Pesto with Artichoke
  • 200ml Hanini Creamylight
  • 1 zucchini, sliced
  • 1 red pepper, diced
  • 100g Mozzarella, shredded
  • Salt, pepper, olive oil
Toss chicken and veggies with pesto, creamylight, salt, and pepper. Transfer to a baking dish, top with mozzarella, and bake at 180°C for 25–30 mins. Serve with crusty bread or rice.
