Chickpea Salad

  • 2 cans, drained Mayor Chickpeas
  • 3 spoons Mayor Diced Onions
  • 3 spoons Mayor Sliced Olives
  • 12 Cherry Tomatoes
  • Parsley
  • Mint
  • Basil
  • Sea salt and ground black pepper
  • Garlic Powder
  • Oregano
  • Savina's Extra Virgin Olive Oil
  • 2, hard boiled Eggs
Boil 2 eggs for 10 minutes and let cool. In the meantime, drain and wash 2 cans of chickpeas and place in a large bowl. Add the diced onions and the olives. Half the cherry tomatoes and add to the bowl. Finely chop the fresh herbs and season with salt, pepper, garlic powder and some oregano. Drizzle some olive oil. Peel the eggs and quarter to decorate.
