Gbejna and Mushy Peas Fritters

Ingredients
- 2 X 400g cans (drained well) Mayor Processed Peas
- 2 Spring Onions
- 2tbsp Chopped Fresh Mint
- 2 Eggs
- 2 Crumbled Hanini Mature White Cheeseletes
- 150g (plus extra for coating) Self Raising Flour
- Salt and pepper to taste
Blitz together the peas, spring onions, mint and eggs into a smooth paste. Add in the crumbled gbejna, flour and season with salt and pepper and blitz again. Form into fritters, coat lightly in extra flour and shallow fry until golden and firm on both sides.
